It is a breed of Heritage cattle that originated in the region of Piedmont, in north-west Italy, where it was first discovered over 1,000 years ago. Now raised from original stock in Nebraska by Certified Piedmontese Beef Co., it is grass fed and vegetarian finished. The Piedmontese breed develops a significantly greater muscle mass compared to conventional cattle. At the same time, muscle fibers remain tender without the need for excess marbling. The result is beef that is both lean and tender.  A serving of Certified Piedmontese beef has even fewer calories ounce-per-ounce than salmon. It is an ideal source of lean protein. The combination of leanness and tenderness results in a consistently healthy and delicious dining experience.
