Chef's Corner: Dutch Letter Bars



I have been enjoying this years Better Homes & Gardens Christmas Cookie magazine! It is packed full of delicious cookies and bars that are simple to make and packed full of flavor. This recipe was super easy and quick to make with only 15 minutes prep time! The bars did not call for almond extract, but I added a dash of extract cause I love the almond flavor. I also felt like in my oven it needed the whole 40 minutes to cook. Let me know what you think once you try this winner of a recipe for your family and friends. I know I will be making this recipe again and again!

 

Dutch Letter Bars

Prep: 15 Minutes

Bake: 35 to 40 Minutes at 350 Degrees

Makes: 24 Bars


  • Nonstick Cooking Spray

  • 1 Cup Butter, Softened

  • 1 8-oz. package, Almond Paste

  • 2 Eggs

  • 2 Cups Granulated Sugar

  • 2 Cups All-Purpose Flour

  • 1/2 Cup Raspberry Jam Melted

  • 1/2 Cup Sliced Almonds

  • 2 Tsp Coarse Sugar





1. Preheat oven to 350 Degrees. Line a a 13x9 inch baking pan with foil, extending foil over edges. Coat foil with cooking spray.


2. In large bowl beat butter, almond paste, and eggs with a mixer on medium until combined. Add granulated sugar; beat until light and fluffy. With the mixer on low, gradually beat in flour until combined.


3. Spread batter in prepared baking pan. Drizzle top with melted jam. Using a butter knife or small metal spatula, lightly swirl jam into dough. Sprinkle with almonds and coarse sugar.


4. Bake 35-40 minutes or until top is Golden brown. Cool in pan on a wire rack. Use foil to lift out uncut bars. Once cool cut into bars.
