Let us take you on a journey through this distinguished winery's history, philosophy, and exceptional wines.
Founded in 1980 by Giambattista Cilia, Giusto Occhipinti, and Cirino Strano, Azienda Agricola, COS has transformed from a humble vineyard to one of Sicily's most prestigious wineries. The founders, driven by a shared passion for reviving ancient winemaking techniques and preserving the integrity of their terroir, embarked on a mission to produce wines that are true expressions of their origins. This dedication to authenticity has earned COS a revered place in the global wine community. COS's winemaking philosophy revolves around the principles of biodynamic agriculture, which emphasizes harmony between the land and its natural ecosystem. By eschewing chemical fertilizers and pesticides, COS ensures that their vineyards thrive in a healthy and balanced environment. This commitment to organic farming not only protects the biodiversity of the region but also enhances the unique characteristics of their wines. Each bottle from COS reflects a deep respect for nature and meticulous attention to detail. The unique terroir of Sicily, with its diverse soils and favorable climate, provides an ideal backdrop for COS's vineyards. The rich volcanic soil, combined with the island's Mediterranean climate, imparts distinct minerality and complexity to the grapes. COS meticulously selects grape varieties that best express the essence of their terroir, resulting in wines that are both elegant and profoundly connected to their origins.
One of the standout wines from COS is the Rami Bianco, a captivating blend of Grecanico and Inzolia. This white wine is fermented in amphorae, an ancient method that allows the wine to develop its full potential without the influence of oak. The Rami Bianco is characterized by its vibrant acidity, delicate floral notes, and a subtle hint of citrus, making it a perfect companion for seafood dishes and light Mediterranean fare.
The Cerasuolo di Vittoria, COS's flagship wine, holds the distinction of being Sicily's only DOCG wine. This exquisite blend of Nero d'Avola and Frappato showcases the winery's commitment to quality and tradition. With its bright ruby color, the Cerasuolo di Vittoria offers an enticing bouquet of red berries, cherries, and a touch of spice. On the palate, it is well-balanced with soft tannins and a refreshing acidity, making it a versatile wine suitable for a wide range of dishes.
Another noteworthy wine is the Nero di Lupo, a pure expression of Nero d'Avola. This wine is fermented in concrete tanks, which allows the true character of the grape to shine through. The Nero di Lupo boasts intense aromas of dark fruits, such as blackberries and plums, complemented by hints of licorice and earthy undertones. Its rich and robust structure, coupled with a long, smooth finish, makes it an excellent choice for hearty meat dishes and aged cheeses. The Contrada and Frappato wines further exemplify COS's dedication to excellence. The Contrada, crafted from carefully selected grapes from specific vineyard plots, offers a profound sense of place with its complex layers of flavors and aromas.
The Frappato, with its vibrant red fruit profile and lively acidity, is a testament to the versatility and elegance of this indigenous grape variety. Azienda Agricola COS stands as a testament to the harmonious blend of tradition, innovation, and respect for nature.
Azienda Agricola COS wines truly reflect the rich Sicilian terroir, crafted with passion and precision. I invite you to explore the incredible wines of COS and experience the unique stories each bottle has to tell. We hope to see you this Sunday!
